Today I am sharing an easy festive cranberry and ginger chocolate slice recipe. It’s rather easy to make.

Firstly, to make it simple, you have a couple of options with the chocolate element.

  1. You can make your own from scratch by using my recipe here: Homemade vegan chocolate with coconut sugar
  2. Alternatively (and somewhat easier) you can buy a bar of dark chocolate instead. Most people do this! If you buy a bar of chocolate then buy a high percentage cacao. Say 70% minimum.

As you will see in the recipe below, we are going to add a touch of maple syrup to the chocolate, and there is an abundance of dried druit in the recipe. The extra natural sweetness is going to make it sweet enough.

Do I used dried or fresh cranberries in a chocolate recipe?

I am using dried cranberries in this recipe. Dried cranberries are easy to find in most decent supermarkets or health food shops.

It’s much better to use dried cranberries in a chocolate rather than fresh for the following reasons.

  1. It means you don’t have to worry about fresh cranberries that might spoil.
  2. The flavour of dried cranberries is sweeter than fresh.
  3. The texture of dried fruit usually works better in a chocolate bar or slice, compared to fresh fruit.

Ginger Options: Use either crystalised or NON crystalised ginger in your chocolate?

The ginger I’ve opted for is a NON-crystalised ginger. The one I peronsally use is 90% ginger and 10% frustose. This is the healthiest option I’ve ever found.

If you can’t non-crystalised ginger then simply use crystalised if you don’t mind the extra hit of sugar.

Other ginger alternatives in chocolate?

This cranberry chocolate slice will also work if you use a tiny amount of freshly grated ginger or a pinch of the dried stuff too.

Remember that you have options. Use whichever form of ginger you have available.

Dried goji berries

I am actually using goji berries these to add a splash of red. This helps as my cranberries are organic and unsulphured, making them naturally less red. If you don’t have goji berries then use extra cranberries instead.

Slithered pistachios

Pistachios come in handy for asthetic reasons, bringing in a lovely hint of green to the medley. They do taste delicious, but I am using them for decorative purposes.

Walnuts

As one of the healthiest nuts available, I am a big fan of walnuts. They work nicely in chocolate because they are not as hard as almonds or brazil nuts. You can however swap for any nut of your choosing though.

  2. Melt your chocolate in a heatproof dish by placing it in a pan of boiling water on a super gentle simmer.
  3. Once your chocolate has melted mix in the maple syrup and coconut oil. This not only adds flavour, but will make your bars more slicable once it has set.
  4. Get a container to make the slices in. I used a loaf tin that was around 20cm x 10cm. You can use anything similar in size. Line it with parchment paper.
  5. Chop the ginger into small pieces.
  6. Toss the cranberries, goji berries, ginger and walnuts into the lined tin. Mix them up.
  7. Pour the melted chocolate over the mix and mix together until everything is evenly coated.
  8. Sprinkle any sprinkles on top.
  9. If you want to set your chocolate rapidly then put it in the freezer. It will freeze very quickly there. Otherwise pop it into the fridge and give it an hour to set.
  10. Slice with a sharp heavy knife when your cranberry ginger slices have set.
  11. Enjoy!
