Blueberry Nice Cream is a perfect, dreamy summer treat. Barefoot – Sun kissed – A deep inhale and I can taste that purpley-blue, fruitful deliciousness before my spoon even begins to melt into the bowl.
I’ve been creating various sorts of delicious vegan ice creams over the last year or two – so much so that I’d forgotten my early-day roots. When I first started out on my healthy plant-based journey I used to make the most delicious ‘ice cream’ in the most simple of ways – with frozen banana and a dash of vanilla – perhaps with a splash of colourful fruits. Everyone always loved it.
Seemed so simple, that it felt like I was cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!
What is Nice Cream?
It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently. You don’t need one of those special ice cream churning machines and you don’t use dairy, refined sugar or any of that jazz. You simply use frozen banana & frozen fruits (in this case blueberries) along with a dash of optional vanilla – that’s it!
The secret to making an excellent ‘nice cream’ is in the frozen ripe banana. We first freeze the banana by peeling off the skin, slicing it up and popping it the freezer overnight (or for a few hours until frozen). It then creams up like a dream in the blender.
Surprisingly the banana doesn’t make it taste banana-ish
Surprisingly banana doesn’t actually make nice cream taste banana-ish! (Well I don’t think it does anyway.) It just has this amazing way of creating a perfect, sweet, creaminess.
What equipment do we need? You have options!
You can use a food processor, a cheap jug blender, a high powered blender or even a hand blender. Every processor or blender is different. In the video below I am using a cheap food processor. Whatever you use, you are going to have to ‘work it – work it’ for a few minutes to get it to soften in to it’s fullness.
In essence, with the blender/processor, you’ll need a sort of:
‘STOP – PUSH THE INGREDIENTS DOWN FROM THE SIDES – START – REPEAT’
action for a few times.
A teeny bit of patience is required (but hardly! I mean, we are actually only talking five minutes max). Also bear in mind that you are going to use totally frozen ingredients for this, so if you use a hand blender, make sure it’s a powerful one (600Watts +) and in which case you might need to let the frozen ingredients soften slightly, for five or ten minutes first.

Perfect spur of the moment treat
This is designed to be made and served immediately – a perfect spur of the moment treat. If you want to make it in advance, you can also pop it in the freezer BUT, it has frozen up, then allow it to defrost for 10 minutes before serving.
