EASY Blueberry Blender Nice Cream with only 3 Ingredients

Blueberry Nice Cream is a perfect, dreamy summer treat. Barefoot – Sun kissed – A deep inhale and I can taste that purpley-blue, fruitful deliciousness before my spoon even begins to melt into the bowl.

I’ve been creating various sorts of delicious vegan ice creams over the last year or two – so much so that I’d forgotten my early-day roots. When I first started out on my healthy plant-based journey I used to make the most delicious ‘ice cream’ in the most simple of ways – with frozen banana and a dash of vanilla – perhaps with a splash of colourful fruits. Everyone always loved it.

Seemed so simple, that it felt like I was cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!

What is Nice Cream?

It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently. You don’t need one of those special ice cream churning machines and you don’t use dairy, refined sugar or any of that jazz. You simply use frozen banana & frozen fruits (in this case blueberries) along with a dash of optional vanilla – that’s it!

The secret to making an excellent ‘nice cream’ is in the frozen ripe banana. We first freeze the banana by peeling off the skin, slicing it up and popping it the freezer overnight (or for a few hours until frozen). It then creams up like a dream in the blender.

Surprisingly the banana doesn’t make it taste banana-ish

Surprisingly banana doesn’t actually make nice cream taste banana-ish! (Well I don’t think it does anyway.) It just has this amazing way of creating a perfect, sweet, creaminess.

What equipment do we need? You have options!

You can use a food processor, a cheap jug blender, a high powered blender or even a hand blender. Every processor or blender is different. In the video below I am using a cheap food processor. Whatever you use, you are going to have to ‘work it – work it’  for a few minutes to get it to soften in to it’s fullness.

In essence, with the blender/processor, you’ll need a sort of:
action for a few times.

A teeny bit of patience is required (but hardly! I mean, we are actually only talking five minutes max).  Also bear in mind that you are going to use totally frozen ingredients for this, so if you use a hand blender, make sure it’s a powerful one (600Watts +) and in which case you might need to let the frozen ingredients soften slightly, for five or ten minutes first.

Perfect spur of the moment treat

This is designed to be made and served immediately – a perfect spur of the moment treat. If you want to make it in advance, you can also pop it in the freezer BUT, it has frozen up, then allow it to defrost for  10 minutes before serving.

EASY Blueberry Blender Nice Cream with only 3 Ingredients

Total Time: 5 minutes
A super easy blueberry blender ice-cream recipe with only 3 ingredients. Also called nice cream, this recipe uses frozen banana, blueberries and vanilla extract. That's it!


  • 3 frozen bananas
  • 100g (1/2 cup) frozen blueberries
  • 1 teaspoon vanilla extract (optional)

  1. Freeze the banana ahead of time by taking off the skin and slicing.
  2. Add all of the ingredients into your blender or food processor.
  3. Pulse to start with. The frozen fruit make take a few attempts at blending before it begins to break down. After a little pulsing, take off the lid and scrape the ingredients down.
  4. Put the lid back on and pulse/blend again. Repeat the scraping down process a few times.
  5. This make take a few minutes and a little patience (see video). But it's worth it!
  6. It will gradually begin to soften and blend and then will start to cream up.
  7. Once it starts to cream up, keep blending until you reach your desired consistency.
  8. Scoop into bowls.
  9. Sprinkle on your favourite topping if desired (i.e. fruit, nuts, seeds, coconut flakes).
  10. Enjoy!

    Blueberries are so great! Frozen blueberries make things so creamy, like smoothies, so as some ice cream…no brainer!

    Love these!!! I made these into ice lollies for my daughter and she loved them and a great way of getting fruit into her diet.
