Chocolate brownies are traditionally a baked, finger food, cake-like dessert. There are different theories on the history of the brownie, but since there is no formal definition of what they are there is a lot of room to use your imagination. Some people make them fudgy, others make them cakey. If you are like me then you might prefer to make them raw, with no cooking involved at all. In this recipe, I am going to show you two different ways to make them, simple style (arty topping optional). Easy no-bake vegan brownies here we come!

Equipment for no-bake vegan brownies?
You have options! Personally, I use a food processor (which I demonstrate in the video). That is the easiest way. However, if you do not own a food processor then you can make them easily as follows…
If you don’t have a food processor use this easy method instead
- Grind down the seeds or nuts in a nutribullet, nut mill, or regular blender. If you are feeling really old-fashioned, then you can even crush them old-school style with a pestle and mortar.
- Soak the dates until they are squishy.
- Put everything in a bowl and squish together thoroughly with your hands until everything combines.
- Magic or what!
- Then follow the regular instructions.
Decoration and toppings for no-bake brownies
You can leave them plain if you like with zero topping at all and they’ll still taste delicious.
I do get quite excited at making them look fancy though. If you are like me and thoroughly enjoy playing with various toppings then here are my tips…
Firstly, I like to make a thin chocolate topping using cacao powder, coconut oil, maple syrup, and vanilla extract. Alternatively, you can melt some of your favourite, healthy, dark chocolate and pour a thin layer of that on top of your brownies. Before it solidifies the chocolate layer will serve as a foundation to hold any of your sprinkle toppings.
You can use anything that can be sprinkled on top. Here are some ideas…
- Crushed nuts
- Crushed seeds
- Goji berries
- Chopped goji berries
- Desiccated coconut
- Flaked coconut
- Cacao nibs
- Chopped or grated chocolate
Think colour, contrast, and, be sure to sprinkle on before the chocolate topping sets.
Playing with your food
Brownies are typically cut into little squares. However, as you may have noticed I do like to make these in a round container and then cut them into triangles.
There are times I will also make little squares or rectangular-shaped brownies.

No-bake Brownies Version 1…
Easy No Bake Vegan Brownies
Super easy no-bake vegan brownies using seeds, nuts, dates and cacao powder. Easier than you might think.
Ingredients
- 125g (1 cup) sunflower seeds
- 125g (⅔ cup) walnuts
- 200g (1⅓ cup) chopped dates
- 3 tablespoons cacao powder
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
Topping Ingredients
- 1 tablespoon cacao powder
- 2 tablespoons coconut oil
- 1 heaped teaspoon of coconut sugar OR, 2 teaspoons maple syrup
- ½ teaspoon vanilla extract
- Optional sprinkles of crushed nuts etc.
Instructions
- Soak and then drain your dates to make them easy to blend. If your dates are pre-chopped then you probably only need to soak for 10 to 15 minutes. If they are whole and particularly dry then soak for longer. You need to soak them until they are squishable with your fingers. Some dates are already very soft already.
- Using a food processor, grind down the sunflower seeds until they are ground into a meal. If you do not have a food processor then use the alternative method in the article written up above.
- Put all of the base ingredients into your food processor and process. If you have a powerful food processor then everything will come together quickly, say 10 seconds. With a less powerful food processor, simply blend for a little longer. You know it is ready when the mixture holds together when you press together between your fingers.
- Pack the mixture down into a container lined with parchment paper (baking paper).
Make the topping
- Melt the coconut oil.
- Mix the cacao powder, coconut sugar (or maple syrup), and vanilla extract together until the mixture is smooth.
- Pour the mixture on top of the brownies and spread evenly.
- Add any sprinkles on top.
Before serving
Let the brownie set in the freezer for at least 15 minutes, or in the fridge for an hour, before slicing.
Storing your no-bake brownies
This will keep in the fridge in an airtight container for a week or in the freezer for a few months.

Date & Almond No Bake Brownies
Easy Vegan no-bake brownies using almonds and dates as the base, along with warming spices.
Ingredients
- 225g (1½ cups) almonds
- 200g (1⅓ cup) chopped dates
- 3 tablespoons cacao powder
- 1 tablespoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- 1 teaspoon vanilla extract
- Pinch of salt

I wonder can we use carob powder instead of Cacau if we are sensitive to caffeine?
Absolutely – carob would work perfectly for this.
