Pull up a chair and let’s tuck into to some yummy nosh! This post is my favourite list of easy vegan soup recipes, especially good for the colder months.
In case you are new here, you might like to know that I am a plant-based retreat chef (vegan for 26 years – where does the time go!). I am a vegan gluten-free recipe developer and written a some recipe books. My aim it to share stuff that makes it easier and fun to embrace a plant-based diet. Easy Vegan Soup Recipes
1. Sweet Potato & Lentil Soup with Creamed Coconut
This soup is delicious! I’ve made so many different versions of this soup. It is perhaps the one thing I eat more than anything else, whether home or away. It’s a thick and satisfying meal-in-itself. Not only that, it’s quick to make and so delectably delicious it makes drool with delight.
2. Turmeric & Ginger Sweet Potato Soup with Coconut Milk
There is something about the way that the warming spices dance with the sweetness of the coconut and sweet potato in this soup. It is a combo that creates a special blend of delectableness. This recipe benefits from fresh ginger and garlic, whilst using dried ground turmeric and pepper. A lot of people have these ingredients to hand already (or if not, they are very easy to come by). This makes it an exceedingly easy soup to make.

3. Chilli Black Bean Soup with Mushrooms and Coconut
I wanted to create a soup that my both my son and myself would like with the right balance of warmth and heat. My son adores chillies and often has a chuckle at my idea of ‘hot and spicy’ compared to his haha. I do prefer super mild spiciness in my cuisine, along with a dancing medley of the other flavours. My son tends to like things hot! I’ve tried to find a happy medium in this blend and am delighted with the outcome using chilli, ginger and black pepper to wonderful effect.

4. Fuss Free Vegan Lentil and Vegetable Soup
I am secretly a lazy cook at times (shhhhhh). This often results in me looking for the fastest way to acheive a wholesome, nutrious and tasty meal. This is another of my typical go-to soups. We are talking a fuss free vegan soup, with lentils, vegetables, warming spices and tomato with ingredients that are very easy to find. A meal in one pot.

5. Creamy Vegan Coconut Cauliflower Soup with Nutmeg & Rosemary
OK, this one will make everyone feel like you’ve just got home from masterchef (except it’s secretly easy haha). Cauliflower, potato, coconut milk, onion, nutmeg, fresh rosemary all infuse together in their wonderful simplicity, bringing out the best in each other to create something very special. It’s grounding, earthy, fragrant, tropical and celestial all rolled into one. Very popular whenever I serve it on retreats.

6. Roast Cashew Soup with Butternut Squash & Ginger
Most of the time involved in creating this soup is spent waiting for things to bake and cook quietly in the background, whilst you can be getting on with something else in the kitchen. The roast cashew in this is a real treat with its rich, silken earthiness infusing into the other ingredients. Adding fresh ginger, coriander, roast garlic and squash creates an exciting feast of gently sweet, aromatic deliciousness.

7. Coconut, Mint & Pea “out-of-this-world delicious” Soup
This is hands down the most popular soup recipe that I serve on retreats. When I say popular, I mean, judging by the response I get when I serve this to group. I am talking ‘OMG, this is the best ever soup’ sort of compliments! This has been happening ever since I started serving this soup many years ago. Perhaps it’s something about the blend of simple ingredients that really want to dance together. Best thing is that you can make it in 15 minutes (yes – that is not a typo – FIFTEEN minutes).
8. Winter squash and lentil soup with warming spices
I often use butternut squash to create this soup, but you can use any winter squash. This soup recipe has warming spices such as ground coriander, cumin and black pepper, but you can easily swap them out for your favourite spices if you want to play with the ingredients.

9. Easy vegetable soup without stock
This is a super easy soup and like all of my soups, it is made without stock. The vegetables are interchangeable, which means that you can swap out for anything you have available.
