This is super simple to make. It’s a fresh chutney rather than a strongly preserved one. I am only using a hint of coconut sugar in it, while allowing the rest of the sweetness to come from the mango. Using freshly grated ginger.

How to use fresh ginger in tea
First of all you definintely want to finely grate your ginger (see video at top of page). This allows the flavours to infuse throughout your tea. Finely grating also unleashes so much more of the goodness, faster.
- Simply infuse the ingredients in a pan.
- Bring to the boil.
- Simmer for at least 5 minutes.
- Strain.
- Enjoy!
