When every morsel of your lunch is filled with nutrient rich goodness you know you are doing yourself a real service. The thing I love about our new ‘Walnut & Coriander’ pate recipe (as well as the scrumptious taste) is that the walnuts, coriander and lemon all give my health a real boost.

Walnuts are thought to be  the healthiest nut available, with superior antioxidant levels and a particularly high offering of vitamin E. 25g of walnuts can provide a whopping 90% of the recommended daily intake of omega 3 essential fat. Then there’s the coriander – an herbal superstar, with excellent antimicrobial, antioxidant, anti-fungal, anti-inflammatory properties as well as great levels of vitamin K, C & A, iron, calcium, potassium and manganese (to name a few). Coriander is said to be good at removing heavy metals such as mercury, cadmium, lead and aluminium from the body, which is more than enough to earn itself a regular invitation to my lunch table. In today’s world of pollution and toxins we can really use all the help we can get to maintain optimum health. We enjoy this pate along with a tasty salad at lunch time…

Serves: 2
Preparation: 5 minutes (plus 3 hours soaking)

Ingredients:
50g walnuts
Small handful coriander leaves
½ lemon juiced
½ small apple
Pinch sea salt

  1. Soak walnuts in water overnight (or for at least 3 hours) to soften for blending.
  2. After soaking, rinse walnuts until the water runs clear.
  3. Juice lemon and compost the left over skin.
  4. Chop apple into small chunks (including skin).
  5. Use a blender to blend all ingredients together (scraping/clearing the blade as necessary) until a pâté has formed.

This works well with a nice dense salad such as kale, broccoli or as veggie dip for cauliflower or carrot and celery sticks.
