When it comes to making smoothies the limit is your imagination. There are so many different combinations possible that you could enjoy a different smoothie every day of the year. Some blends, do however, really dance together… like this blueberry, lemon & cashew breakfast smoothie.

It’s so good for you. All of the of the ingredients are designed by nature to support your health with an abundance of vitamins, minerals and essential fats. Not only is it lip lickin’ delicious, it also has a welcomed immune supporting ability. Like most sweet berries, blueberries are full of anti-oxidants. Lemon helps to bring out the best in all of the other flavours; whilst working it’s natural medicinal magic, loaded with vitamin C and acting as a powerful anti-viral, anti-bacterial and anti-oxidant. Cashews add a little je ne sais quois, bringing in a welcomed depth. Its essential fatty acids help slow down the release of the natural fruit sugar from the fruits – which can help keep us energised and satiated  for longer.

It’s not actually essential to soak the cashews in advance either, although, if you do have the time (and remember), then soaking and draining the cashews ahead of time for at least an hour (or even over night) makes them luxuriously soft and blend-able.

Blueberry & Lemon Cashew Smoothie

Blueberry & Lemon Cashew Smoothie

Yield: 1 large glass

A deliciously healthy smoothie rich in anti-oxidants and nutritional benefits.

Ingredients

  • 1 large chopped frozen banana
  • 1/2 cup of frozen blueberries
  • 1/4 cup cashew
  • 1 small lemon juiced
  • 1 cup (250ml) vanilla almond milk

Instructions

  • Soak cashews over night or for at least an hour to make them soft and blend-able. You can also miss this soaking part out if you forget. Not soaking them can make the smoothie ever so slightly bitty and rustic (which can be very nice too).
  • Add all ingredients to your blender and blend until you achieve desired consistency.
  • Add a little extra almond milk if you want to thin it down.
  • Enjoy.
