This is a super healthy salad offering, bursting with goodness. Every mouthful is rich in anti-oxidants and full of vitamins, minerals, essential fats. This is the sort of salad I might eat on a daily basis; an ideal choice to support a healthy lifestyle. It also works well as part of a ‘get healthy’ detox or cleanse program).
It’s infused with zingy garlic and gentle parsley along with a myriad of excellent ingredients. Let’s look at why some of the ingredients are so good for us first…
Raw, crushed garlic infused into a salad is a powerful way to benefit from it’s incredible health benefits. Garlic has been shown to support cardiovascular health; to act as a strong anti-bacterial and antiviral agent; to work as an anti-inflammatory and help the absorption of iron.
Adding fresh parsley not only delivers a healthy portion of vitamins K, C & A and anti-oxidants, but it also helps to neutralise the smell of garlic – preventing garlic-breath.
Hemp oil has the perfect 3:1 ration of omega-6 to omega-3 essential fatty acids, which has been shown to promote good heart health. It is also a great mercury free source of omega-3 (people often consume fish oils for omega-3, which are known to be flooded with mercury).
Carrots are best known for their high levels of anti-oxidants and have proved to reduce the risk of cardiovascular disease. Pak choi and rocket vital have an abundance of phyto-nutrients, vitamins, minerals and health-benefiting anti-oxidants.
Avocados earn a place the super-food hall of fame thanks to an abundance of potassium (twice as much as a banana), copper, fibre and lots of vitamins B5, B6, K and C. Healthy avocado plant fat helps to ensure balanced cholesterol levels, lowering the risk of heart disease. They are also are thought to help keep the brain, eyes and blood pressure healthy, whilst large amounts of the plant phytonutrient polyphenols and flavonoids, work as a good anti-inflammatory agent. Serves: 3
Time: 10 minutes
Ingredients:
- 2 large carrots
- A few pak choi leaves
- Handful of rocket (arugula)
- 1 ripe avocado
- 2 smallish scallions (spring onions)
Sauce ingredients:
- 1 large clove garlic
- Handful fresh parsley
- 3 tablespoons balsamic or apple cider vinegar
- 5 tablespoons hemp oil
- 1 small apple
- Grate carrots and chop the pak choi and scallions.
- Half the avocado and score into squares before scooping out and adding to the bowl.
- Create the sauce by crushing the garlic clove; roughly chopping the parsley; chopping the apple into small cubes and then blending together using a hand blender with the rest of the sauce ingredients.
- Mix the main salad together with the sauce; sprinkle with hemp seeds and enjoy fresh.

That sounds lovely. I don’t have all the ingredients but will substitute the pak choi for spinach. I have some tiny rocket leaves in my greenhouse. Also I will use apple cider vinegar instead of balsamic! Will let you know how I get on. A lively new salad to start the new year with!
