Like all of my recipes you can expect this one to be delicious, with every morsel full of nutritional goodness. This is my vegan apple ginger oat bars recipe!
These bars contain oats, fresh apple, fresh ginger, peanut butter (or tahini or almond butter), dried fruit (raisins, sultanas or apricots), cinnamon and a hint of maple syrup. These ingredients all dance together remarkably well.

What I use to bind my healthy apple ginger oat bars?
This is question I get asked a lot when I serve this. Let’s unveil that mystery. It’s more simple than you might think.

- Moisture from the fresh apple
- A hint of peanut butter, almond butter or tahini (you choose)
- A hint of maple syrup or any syrup sweetener
Are there any alternatives to using oats?
I get asked this alot for any my oat recipes. Especially from people who can’t eat oats.
The good news is yes you can swap oats for the following ingredients…
- Quinoa flakes
- Buckwheat flakes
- Millet flakes
- Ground nuts or seeds

They have a good blend of natural sweetness, gentle carbohydrate and plant-based fats. This makes them a well rounded nutritious bar, covering quite a few bases.
Batch make your oat bars for later
They keep well for about a week in or out of the fridge.
You can also batch make them and freeze for a later date. I might double or triple the batch and then cut them into bars or squares and freeze them.

Apple & Ginger Oat Bars
Delicious, healthy apple and ginger oat bars. Naturally sweetened with apple and dried fruit.
Ingredients
- 150g (1 cup) quick oats
- 2 dessert apples (medium size)
- 1 heaped teaspoon fresh ginger (finely grated)
- 1 teaspoon cinnamon powder
- 2 tablespoons of nut butter or tahini (or peanut butter)
- 1 tablespoon maple syrup
- 30g (handful) raisins (or any dried chopped fruit)
Instructions
- Take a look at my quick video below for a visual guide on how to make these. It's super easy when you know how!
- Grate your apple with skin still on, into a mixing bowl.
- Finely grate your ginger.
- Add the oats, cinnamon, nut butter (note: you can also use tahini or peanut butter), maple syrup and dried fruit.
- Mix together with a spoon and then with your hands. The mixture should squish together very well after a short amount of squishing.
- Line an oven dish with baking paper. I use a dish that is around 21cm x 16cm (8" x 6" approx). It doesn't matter if it's a little more or less than those dimensions. Use what you have available.
- Put into a pre-heated oven at about 190C (375F) and bake for around 18 to 20 minutes.
- Once baked, put your apple and ginger oat bars onto a cooling rack.
- Slice into bars or squares when cool.
