This week I have got a few sweet potatoes in the fridge that needed using up, so I decided to make some sweet potato patties with them. They make a fabulous, adaptable patty and  the recipe is very easy and fuss-free.

I have used red kidney beans to make my sweet potato patties. They are one of my favourite beans to use. But you can actually use any bean in this recipe. You’ll find that black beans and chickpeas work especially well.

Simple vegetable patty ingredients and swaps

I’ve intentionally kept the ingredients simple to make these easy for you to make.

The fresh parsley can be swapped for cilantro (coriander leaves), spinach or kale.

The ground coriander and smoked paprika can be swapped for any other warming or hot spices. I’ve used garam masala, chilli, cumin, nutmeg in previous versions of these patties. They all work well.

Sesame seeds making an excellent coating for patties

You’ll notice that sesame seeds work well to cover your sweet potato patties. The patties are soft, so and outer coating helps to stop them sticking to the baking paper or oven tray.

If you don’t have sesame seeds available then you can swap for ground nuts or seeds or any sort.

You can also use ground oats, or a very light sprinkling of any flour.

Tips for making good sweet potato patties

  1. Your sweet potato patties are going to be quite squishy, which means it helps to remove any excess moisture that you can ahead of shaping them. You want as much moisture removed as possible, otherwise your patties will be too squishy to work with.
  2. Drain your sweet potatoes thoroughly after boiling them.
  3. You also need to drain your beans well. After I’ve seived them, I blot off any extra moisture with paper kitchen towel.
  4. You can either use a potato masher to mash them or simply squish everything together with your bare hands. Leaving a few rustic chunks in your patties is always nice to do.

Simple Sweet Potato Patty Recipe

Yield: 10 patties
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

Tasty sweet potato patty recipe using sweet potatoes and beans along with warming spices. Can be batch made and frozen. Excellent lunch box snack, addition to a main meal or lunch. Served hot or cold.

Ingredients

  • 800g (28oz) sweet potatoes (unpeeled weight)
  • 1 can red kidney beans (drained)
  • Handful fresh parsley
  • 1 teaspoon sea salt
  • 1 tablespoon ground coriander
  • 1 heaped teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 50g sesame seeds

Instructions

  1. Be sure to watch my super quick video below first for a visual on how to make these.
  2. Peel and dice your sweet potatoes.
  3. Boil your sweet potatoes in a pan and then simmer with a lid on until you can pierce them easily with a fork. Be careful not to over cook them. This should take about 10 minutes from coming to the boil.
  4. Drain your sweet potatoes very throughly before using them. Allow all excess moisture to evarourate and drain off. If you have time, let them cool down first, as this makes them slightly easier to work with.
  5. Thoroughly drain your beans. Once drained you can pat them with kitchen towel to further remove any extra liquid.
  6. Chop your parsley.
  7. Add all ingredients together in a mixing bowl.
  8. Mash everything together with a potato masher, or by squishing with your hands. Be sure to leave some rustic chunks.
  9. Shape your sweet potato patties.
  10. Dunk them in sesame seeds.
  11. Line a baking tray with parchment paper and place your patties on.
  12. Put them into to a preheated oven at around 200/220C (400/425F). Bake them for about 25 minutes. Alternatively use an air fryer.
  13. When they are done serve hot with a main meal or lunch, or let them cool down and use as a lunchbox or hiking snack.
  14. You can batch make these and freeze them.
