Let’s talk about feel-good comfort food! Sometimes you just want something that has a perfect moist cake texture whilst giving you a sweet (but not sugary sweet) ‘ahhhhh’ moment – leaving you feeling satiated, yet not bloated. Now we’re talking! How about some gluten-free vegan banana bread made without refined sugar?
My old friend Oliver aka ‘Banana Man’ (who I affectionately named, because he’s crazy, crazy, crazy about bananas) is a real fan of my Gluten-free Vegan Banana Bread recipe.
When I first served it to him the other day I held my breath, as he took the first bite… a pause, a moment of suspense and then a big YU-U-U-M! If it get’s a 10-out-of-10 vote from Banana Man, then it’s a big winner! It’s been proving very popular here in Glastonbury over the last few days, with everyone who has visited my kitchen.

This perfectly moist, Banana Bread is naturally sweetened with ripe bananas and little touch of coconut sugar. As with all the recipes here at Trinity’s Conscious Kitchen, it’s also totally plant-based and gluten-free. It’s simple to make and slices up nicely once it’s cooled down.
Gluten-free Vegan Banana Bread Recipe - absolutely delicious!
A deliciously moist vegan, gluten-free banana bread recipe, without refined sugar. Easy, super healthy and a real winner!
Ingredients
- 3 medium sized bananas
- 1 tablespoon ground flaxseed
- 3 tablespoon water
- 120g (1 cup) brown rice flour
- 50g (1/2 cup) tapioca flour
- 50g (1/2 cup) gluten-free oats
- 1 heaped tablespoon ground cinnamon
- 4 tablespoons coconut sugar
- 1 teaspoon bicarbonate soda (baking soda)
- 125ml (1/2 cup) coconut oil
- 2 teaspoons vanilla extract
- 1 teaspoon apple cider vinegar

Thanks so much for your kind words about my videos. There were often months between my videos, until a few weeks ago I decided to commit to doing about one every week. Totally thrilled about that! These new ‘quick guides’ are the perfect solution. It means I can mix them up with other ‘come and join me in my kitchen as I talk step by step’ videos.
Not quite sure about olive oil, but do let me know how it goes. I believe that the coconut oil may be playing a little culinary magic in this one. Banana Man tried making it with spelt flour too (didn’t work whoops). Always happy to explore other options.

Well – it turns out that I only had Spelt flour, and did substitute Olive Oil. It was ‘interesting’. Not so much a desserty thing as a denser sweet bread that I served with Curried Squash Soup. It was AWESOME !!
Since I have switched completely over to Vegan (well – with the odd egg once in awhile) my cooking has become much more simple. Simple ingredients and amazing creations.
How are you doing now that things have settled down after your Angelicious book launch?

I like the sound of your alternative loaf… I sure miss bread, so I might explore this idea some more 🙂 I am NUTS for this banana bread though. If you get the GF flours, then do give it a go like that too – it’s my new favourite (and that’s saying something).
I’d be happy to set up an Etheric Breakfast Bar type forum… perhaps in the new year. It would be awesome to pick that up again. I do miss our chats. I can create it so that we can also post images in posts (although I don’t seem able to allow that for regular comments like this).
Wooo – life is interesting. I am totally bowled over at how Angelicious has done so far. I’ve been re-configuring my life so that I can put most of my energy into what I doing with recipe development (and related things such as workshops and wellness coaching). It’s a massive change for me, not being so involved up front with Openhand, but it feels like it is giving everything the space it needs to fully come into divine being. I am already writing my next book (just can’t contain myself!!!).

Just made this and wow, supper moist! I had made a vegan banana bread a few weeks ago and it wasn’t as moist as this. I added 1/4 cup of walnuts for an added crunch. Oh and I also ordered both of your books. Thank you!!
That’s wonderful to hear Nicole! I love the sound of walnuts with it too… I can already feel how awesome that crunch would be! Chocolate chips work well too for a bit of extra indulgence.

hi.:) i really want to try this bread the only problem is that my body cant digest cereals like oatmeal or rice with fruits . Do you think i can use almond flour instead?if i can how much should i use having in acount that i will sustitute the oatmeal and the rice. and i dont have tapioca,but i have arrowroot flour. should i use same ratio?thank you very much for your help

If we took out and exchanged the oats, rice flour and tapioca I’d have to create a whole new recipe from the ground up 😉 A lot of my recipes are very adaptable, although this one is not. Its delicious taste and texture are dependent on following the exact recipe. Ahhh not this time then.
