My magical matcha latte drink with oats and cashews is divine. However, knowing how to make an exceptionally good one does make a difference. A good one should be creamy, gently sweet with a balanced blend of earthy green.  If you don’t make a good one it can be bitter and put people off.

Today I am sharing my magical vegan matcha latte recipe. It’s my best matcha recipe, the one I make for myself most mornings at home.

An alternative to plant-based milk from a carton?

The first thing that makes this different to many vegan matcha latte recipes is that I am not using plant-based milk from a carton. Plant-based milk from a carton often contains gums and less ideal ingredients.

So I prefer this method.

We are going to make ours from scratch. In a kinda magical way!

It only takes a few minutes. You’ll need about 60 seconds in a blender, preferably a bullet blender. Then all you need to do is bring the contents to the boil in the pan.

This means that I blend the oats and cashews in the blender to make our ridiculously quick plant-based milk on the spot. It’s incredibly simple.

Oats are ideal because they cream up nicely. Cashews add a touch of fat and another layer of decadent creaminess. We don’t need a lot for the desired effect.

Which matcha powder should we get?

There are loads of matcha green tea powder options available, which can lead to confusion about which one to get.

I recommend getting an organic matcha (from Japan if possible) if you want to benefit from wholesome nutritional goodness. Quality does vary considerably.

What are the benefits of drinking matcha latte tea?

Matcha is very high in antioxidants, which are said to prevent cell damage and lower the risk of certain diseases.

This potent green powder has also been shown to improve cognitive function, and cardiovascular health, and may have anti-tumour effects.

Maple syrup is an excellent sweetener

I am using maple syrup as a sweetener in this recipe. That’s because it has a delicious caramel-maple taste. It’s also easier on the system than regular refined sugar.

You can swap for any sweetener, but bear in mind that maple syrup will give your matcha latte a little bit of magic.

Vegan Matcha Latte - oat & cashew

Cook Time: 3 minutes
Total Time: 5 minutes

A delicious vegan matcha latte with oats and cashews. Sweetened with maple syrup and made in a bullet blender.

Ingredients

  • 5 to 10 cashew nuts
  • 1 tablespoon oats
  • 1 heaped teaspoon matcha powder
  • ½ teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 350ml (1½ cups) water

Instructions

  1. Take a quick peek at my short video below to see how to do this.
  2. Put all of your ingredients in a blender. A bullet blender works especially well for this.
  3. Blend for about 60 seconds. This should ensure that the cashews have blended nicely along with all of the other ingredients.
  4. Once blended, pour into a saucepan.
  5. Bring to the boil, stirring a couple of times as it heats up.
  6. Pour into your mug and enjoy immediately.
  7. Alternatively pour into a thermal flask and enjoy later.
