Sometimes it’s the simple, effortless blends that are the most rewarding. This is a well loved favourite that came into being during a week long intensive retreat I was catering for a few years back in Snowdonia. Everyone was eating so much food, that I needed to created an extra tasty, health yet filling dish with 15 minutes to spare. I quickly scanned the kitchen for whatever was available and Serenity Mint Pea Soup divinely wove itself into being! It has been a firm favourite ever since. Serenity Mint Pea Soup
A super healthy, fast soup using fresh garden mint, peas and potatoes.
Ingredients
- 1 large potato
- 900g fresh or frozen garden peas
- 50g creamed coconut block
- Large handful of fresh garden mint (or 1 heaped tablespoon of dried spearmint)
- 1 teaspoon sea salt
- 700ml spring water
Instructions
Variation:
- Use a 400ml tin of good quality, organic, coconut milk instead of coconut block and omit 600ml of water from the original ingredient list. Or used 200ml of coconut cream and leave out 200ml of water from the recipe. Then create as above.
