Sometimes just need a little smackerel of something sweet and chocolatey. There are times when you just do not have time to be spending half an hour in the kitchen making your treat. And let’s face it, there are moments when you just gotta have it ‘now’!

So this chocolate almond banana pot is perfect for just those moments. I timed myself (just for fun – as you do!) and it took me about 60 seconds to make it. No kidding.

I use a hand blender for extra smoothness, although you can easily use a fork to quickly mash the ingredients and whip it up that way instead.

A vegan chocolate pudding to elevate your mood yay?

Did you know that chocolate has been proven to elevate the mood? What fabulous news!!! So if you have any questions about whether it is good for you or not, be assured that it certainly has benefits.

How many of us can’t resist reaching for the chocolate when under emotional stress! Well, now you know that there may well be a deeply intuitive reason why; so there’s absolutely nothing to feel guilty about.

Healthy pure cacao or cocoa encourages the production of endorphins,  the ‘feel-good’ chemicals that make us happier. In addition to that, cacao contains serotonin, which also is excellent for elevating the mood. Flavanols (which are amazing anti-oxidant nutrients) are also thought to be linked to cacao’s mood enhancing effects. Bring on the chocolate!

What makes this vegan chocolate pudding so easy to make?

I am only using three ingredients for a start. Cacao powder, a ripe banana and almond butter. Using a ripe banana is important to ensure a delightfully sweet taste.

Almond butter gives it that much-desired creaminess (whilst also complimenting the cacao and banana like a match made in heaven).

What is the difference between cacao and cocoa powder?

Cacao really just the name we use for cocoa in the Spanish speaking world. Some people do however say that cacao is is the ‘raw’ version, not roasted and not heat-treated. In which case that would mean ‘cocoa’, on the other hand, has been roasted and heat treated.

I would say just go for a cacao or cocoa powder that you are happy with.

Sometimes, unfortunately, cocoa is heat treated with an alkalized chemical product to make the end product taste richer and sweeter (this is known as ‘Dutch-processed’). I avoid these one as I prefer food without chemicals.

Whatever you get make sure it is organic and fairly traded. You also want to be sure that what you are getting is plain and just has one ingredient ‘cocoa’ or ‘cacao’ (i.e. no added extracts like sugar). Get the best quality one that you can and you’ll benefit from such goodness.

How to make a healthy vegan chocolate pot in one minute

Yield: 1 pot
Prep Time: 1 minute
Total Time: 1 minute

A super easy vegan chocolate pot recipe using banana, cacao and almond butter. All you need is one minute a hand blender or fork and you are done.

Ingredients

  • 1 ripe banana
  • 1 tablespoon cacao powder
  • 1 tablespoon (heaped) almond butter

Instructions

  1. Peel the banana.
  2. Put the banana, cacao and almond butter in a bowl.
  3. Use a hand blender to blend until creamy smooth.
  4. If you don't have a hand blender then simply mash thoroughly with a fork.
  5. Enjoy immediately or chill and eat later.
