I’ve just created the most delicious vegan almond oat energy bars and I’m so excited to share them with you!
I wanted to make something I could batch prepare for my active lifestyle – you know, lots of climbing and hiking haha – and share with my friends too. Between all of us, when we’re busy, focused and adventuring, we keep forgetting to eat! So I was on a mission to create something super wholesome with sustained energy release that also tastes absolutely delicious. Something to refuel with until there’s time to sit down for a proper meal.
These oat energy bars are naturally vegan and made with simple whole foods. They’re packed with plant-based ingredients that work together beautifully to give you steady energy and real nourishment. Each ingredient has a purpose. Together they create balance, flavor and lasting fuel for whatever your day brings.

What Makes These Vegan Almond Oat Energy Bars So Nourishing?
Oats – Your Foundation for Steady Energy
Oats are the heart of this recipe and they’re brilliant at providing slow-release energy that keeps you going.
They contain a special soluble fiber called beta-glucan, which has been shown in clinical research to support healthy cholesterol levels when eaten regularly. In fact, studies have found that consuming 3 grams of oat beta-glucan daily can reduce LDL cholesterol by around 6% – that’s the kind of cholesterol we want to keep in check for heart health.

With coconut sugar, the energy feels steadier and more balanced. I’ve also only used a minimal amount in this recipe – just enough to give a hint of natural sweetness.
Coconut sugar is less processed than white sugar and contains small amounts of trace minerals like potassium and zinc. It’s been reported to have a lower glycemic index than standard white sugar, meaning it may raise blood sugar more slowly.
In this recipe, the coconut sugar is balanced with fiber, healthy fats and protein from the oats, tahini and almonds. This combination slows down how quickly the sugar is absorbed by your body.

Vegan Almond Oat Energy Bars
Super healthy vegan almond oat bars with whole food ingredients. Only 5 ingredients.
Ingredients
- 150g (1½ cups) oats
- 50g (½ cup) ground almonds
- 30g coconut sugar (2 tablespoons)
- 100g (⅓ cup) tahini
- ½ teaspoon almond extract
- 50ml (¼ cup) water
- 20g vegan chocolate (optional)
- 1 teaspoon coconut oil (optional)
Instructions
- If you haven't already ground your almonds, do that first. It takes about 10 seconds in a NutriBullet. You can do it in any blender or food processor. Alternatively you can also buy pre-ground almonds, if that helps.
- Weigh your almonds and oats and put into a mixing bowl along with the coconut sugar.
- Mix the tahini, almond extract and water until you get a nice cream. It might clag to start with, so be persistent as with mixing it will soon turn to a smooth cream.
- Line a loaf tin (1kg/2lb sized) or similar with parchment paper.
- Mix everything together thoroughly. You can do this with a spoon. I do it with my hands, which is far more fun haha.
- Compact your mixture into the parchment-lined loaf tin. Press down thoroughly and smooth down with a spoon if you want it to be super super neat.
- Put into a pre-heated oven at 180C (350F) and bake for about 15 minutes.
- Take out and allow to cool before slicing.
- They are ready once cooled.
Optional Topping:
- Melt a little bit of chocolate with a hint of coconut oil and then drizzle onto half or all of the top and sprinkle on something healthy. I used chopped pumpkin seeds and culinary rose petals to be fancy.
Storing Your Vegan Almond Oat Bars:
- Keep these in an airtight container for up to a week or two. You can also batch make them and freeze for up to 3 months.

Swap the tahini for almond or cashew nut butter.
