Gluten-free crackers are like gold dust. It’s difficult to find a good recipe that works, so I’ve gone and developed what I think it the BEST gluten-free cracker recipe. I think we all want crunchy crackers, tasty crackers and crackers that are easy to make.

They bake in 10 short minutes and only take 5 or 10 minutes to mix and roll out.

Once you make them, they’ll probably become a staple. And not just for gluten-free people, but everyone. You’ll notice how quickly they dissapear if you leave them on the kitchen counter haha!

Ingredients in these gluten-free vegan crackers

The main ingredients in this recipe are easy to find in any good health food store or online.

Flours that I use

For ‘flours’ I am using buckwheat flour, tapioca (or cassava) flour.

A tiny amount of gluten-free oats

And then for a little bit of substance and je ne sais quois I am using rolled gluten-free porridge oats. Not super thick chunky like steel cut oats. Use regular porridge oats or quick cook oats.

Not sure why oats works so well. They seem to add a little bit of magic.

I only add a tiny amount of oats, and it seems to take gluten-free crackers to a whole new level. I tried leaving them out and swapping for buckwheat flour. That works fine but not quite as good, so I definitely recommend oats unless you have an allergy to them.

Binders for these gluten-free crackers – water & coconut oil

Then I am using coconut oil and water with a 50/50 ratio.

You could leave out the oil altogether if you don’t want to use it, although it does make a difference and I much prefer the oil version.

Making your gluten-free crackers extra fancy

I am sharing the super simple version below, but it’s easy to jazz these up with extra additions.

Other options might including adding…

  • A touch of fresh garlic or garlic powder with some finely chopped parsley or dried parsley.
  • Some chili powder.
  • Warming spices.
  • Finely chopped rosemary and onion powder.

The best gluten-free crackers recipe (vegan)

A crunchy, delicious gluten-free vegan cracker recipe. Quick and easy.

Ingredients

  • 50g ground sunflower seed
  • 35g buckwheat flour
  • 20g tapioca flour (or cassava flour)
  • 20g rolled oats
  • ½ teaspoon sea salt
  • 2 tablespoons coconut oil
  • 2 tablespoons water
  • Extra buckwheat flour for rolling

Instructions

  1. Watch video (below) first for quick demo on how to make these.
  2. Grind your sunflower seeds in a nut mill or bullet blender.
  3. Mix in thendried ingredients.
  4. Melt the coconut oil.
  5. Add in the coconut oil and water.
  6. Mix together, firstly with a spoon, and then then massage together thorughly with your hands until you have a rollable dough.
  7. Sprinkle a little buckwheat flour on to a flat surface or board.
  8. Roll out your cracker dough mix. It's best not to turn it as it will probably tear (since it contains no gluten). See video for demo on how to do this.
  9. Once you have rolled it out evenly and it is about 3mm or 4mm thick use a sharp knife to cut your crackers into squares.
  10. Use a large knife or spatula to ease them off.
  11. Put your cracker squares onto a very lightly oiled baking tray.
  12. Bake in a pre-heated oven at around 180C (350F) fan oven for about 10 minutes, or until they start to tan. All ovens are not equal, so keep an eye on them. They can easily burn if not careful.
  13. Once baked take off the tray and put them on to a cooling rack.
  14. Enjoy!
