For a balanced base, try a blend I often use in my cakes: 1 cup rice flour, 1 cup oat flour, and ½ cup tapioca starch. Each flour brings its own personality to your creations, keeping textures interesting and delicious.

Binding Agents Without Eggs
Eggs can be tricky in vegan baking, but there are brilliant alternatives:
Flaxseed “egg” – 1 tbsp ground flaxseed + 3 tbsp water, let it gel for a few minutes. Essential in my GF bread.
Chia seeds – Works the same way as flax and adds a extra dose of superfood nourishment.
Sweet potato – Moistens and works as a binder beautifully used in my sweet potato chocolate cake.
