Oh wowzers, what an utterly amazing healthy sweet treat. It’s not even a stretch to say that they the most deliciously yummy bliss balls on my menu! We are talking raw caramel bliss balls, made with only 4 ingredients.
These are too good not to share. You’ll probably want to make extra and share them with your friends, loved ones, strangers, and neighbours.
Naturally sweetened with dates. Gluten-free and vegan too. Good for almost everyone!
Raw caramel bliss balls for batch making
This recipe is ideal for batch making as you can simple double, triple or quadruple the recipe.
They keep in the fridge for a couple of weeks, or the freezer for months.
What equipment do I need to make raw caramel bliss balls?
Ideally you’ll use a food processor, if you have one. If not there are several options as follows…
1. Food processor option to make raw caramel bliss balls
First you’ll grind your nuts and seeds. Next you’ll add the other ingredients and blend. The process happens very quickly. Out of all the options, you have most control over your caramel bliss balls using a food processor.
It doesn’t have to be a fancy one, any old food processor will do.
2. Blender option
If you don’t have a food processor then the next option is to use a blender.
That said, you’ll need to stop and scrape down the sides a few times to get it to blend properly. A but more faffy to make than using a food process, but I’ve done this it this way many times.
3. Bullet blender and then hand squishing
If you have a bullet blender then this is an easy alternative to using a food processor for making bliss balls. This is the method I teach on retreats.
- Simply grind your nuts or seeds to a powder or rustic meal.
- Then after soaking your dates until they are squishable, all you need need to do is squish all of the ingredients together with your hands. Like magic.
What is lucuma?
Lucuma is a fruit with an orange-golden flesh, which grows in South America, especially Peru, Ecuador, and the Andean Valleys. It has a caramel or butterscotch flavour.
It’s low on the glycemic index, which makes it an excellent natural sweetener.
In other countries like the UK & USA we tend to get lucuma in powder form.
Raw salted caramel bliss balls
Raw superfood caramel bliss balls. Using dates and lucuma to sweetend.
Ingredients
- 150g pitted dates
- 150g almonds (see notes below for swaps)
- 2 tablespoons lucuma powder
- Pinch sea salt
Instructions
- If your dates are not squishable then soak them ahead of time. Usually an hour is enough for this, unless they are extra dry. Once they are squishable, drain off the water.
- Grind your almonds in a food processor. This can be super fine or rustic, depending on preference. See article above if you don't have a food processor for alternative options.
- Put your soaked dates, lucuma powder and pinch of sea salt into the food processor. Process the blend until it all sticks together. This should happen quickly.
- Once you can squish together with your hands it is ready to roll in to balls. Taste it first if you like, add a little extra salt if you want it more salty.
- Take out little dollops and roll them into balls with the palms of your hands.
- You can eat them straight away. Alternatively they'll keep in the fridge for a couple of weeks, or in the freezer for months.
