For me this is literally the ultimate bar of heaven! We are talking trail mix and chocolate all rolled into one delicious bar of nutritional goodness. Below I’m sharing a recipe for the vegan trail mix chocolate bar from scratch and also the cheating version.

It works for everyday snacking, although for me it’s my new hiking goto bar.
As an avid hiker I’ve started taking this bar of trail mix chocolate on a hike. I do this for a couple of reasons.
- It offers a good boost of energy with relatively little extra weight to carry.
- It is jam packed with healthy goodness.
- I LOVE chocolate!
What equipment do you need to make the chocolate bars?
Not a lot!
A chocolate mould is entirely optional. If you don’t have one simply use any container (glass or plastic) and line with parchment or baking paper.
You need a stove of some sort, a sauce pan and a heatproof bowl (pyrex or some such).
The cheating way to make the trail mix chocolate bars
If you don’t have cacao butter, cocoa powder and coconut sugar you can alway just cheat and melt a vegan chocolate bar instead.
The proper way to make the trail mix chocolate bars?
It’s a lot easier than you might think to make these chocolate trail bars from scratch.
I make mine by melting cacao butter in a heat proof bowl that I’ve put into boiling water.
The next thing is to add some cacao powder and coconut sugar and mix together before adding your trial mix.
You need to pour the whole thing into either a chocolate mould or a parchment/baking paper lined container. Then you can set it in the fridge or freezer.
Which trail mix ingredients should I use?
The limit is your imagination here!
You can use any nuts, seeds, dried fruits. I even put non-crystallised ginger in mine.
I’ve shared the quantities I’ve used to give you an idea. For me I was thinking about nutrition and energy on the trail when hiking. The formula I’ve shared is a fairly typical blend that I use.
Vegan Trail Mix Chocolate Bar Recipe
The ultimate trail mix chocolate bar recipe. Vegan but suitable for everyone.
Ingredients
- 40g (0.7oz) cacao butter
- 20g (2 tablespoons) coconut sugar
- 25g (4 tablepsoons) cacao powder
- Pinch of sea salt
- Small handful brazil nuts
- Small handful non-crystallised ginger
Instructions
- Please watch my video below for a super quick visual on how to make these. Look at notes for alternative on the chocolate part.
- Heat about an inch of water in a sauce pan, bring to the boil and turn down to minimum.
- Place a heat proof bowl in the water along with your cacao butter, coconut sugar and let it melt, mixing with a spoon.
- Add in the cacao powder.
- Add a pinch of salt.
- Swap out any of the remaining ingredients that you don't like for any other nut, seed or dried fruit.
- Roughly chop your brazil nuts.
- Roughly chop your non-crystalised ginger.
- Mix all the other ingredients in.
- Pour into chocolate a chocolate mould or any container line with parchment/baking paper.
- Set in the freezer for about 20 minutes or in the fridge for about 45 minutes.

Notes
Chocolate option: If you don't want to make chocolate from scratch with cacao butter, then simply get a good quality bar of vegan chocolate (about 85g or 3oz) and melt that in the heatproof bowl. The rest of the instructions are then the same.
