This year I’ll be having a quite Christmas Dinner at home with my son. We’ll be enjoying a table filled with totally plant-based, gluten-free, healthy deliciousness. Consciously preparing cuisine, with love, means that we can truly celebrate in style and know that we are honouring other sentient life in the process… Of course it has to be super tasty too. However you are spending your festive season, I hope this inspires you to create something healthy, yet delicious too.
Our Conscious Christmas Dinner is going to look something like this…
A Delicious Seed Roast Loaf
A super healthy Seed Roast Loaf, made with seeds and carrot as the base ingredients, means we’ll all feel very satiated, yet light (which means, plenty room for pudding later 😉 )… Seed Roast Loaf Recipe

This gravy makes the perfect partner for the Seed Roast Loaf.
Roast veggies
Christmas dinner wouldn’t be complete without a hearty helping of roasted veggies. You can chop well in advance and whip them out to pop in the oven once the clock starts ticking; they’ll work their own culinary magic with very little attention, leaving you to lovingly weave the rest of dinner. The ingredients are interchangeable. These are just suggestions.
Ingredients:
½ small swede (rutabaga)
½ small cauliflower
½ butternut squash
2 courgettes (zucchini)
3 small red onions
3 parsnips
2 cloves garlic
Handful rosemary
Sprig of thyme
Sea salt
Drizzle of coconut oil
- Preheat oven to gas mark 7 (220˚C/425˚F).
- Cut onions into wedges and crush garlic.
- Slice parsnips, swede and courgette into wedges.
- Scoop out seeds from squash. Peel the skin and chop squash into wedges.
- Chop the cauliflower into florets.
- Lay out all mixed veggies into one or two oven trays.
- Roughly chop rosemary and pick off thyme leaves before sprinkling over the veg.
- Drizzle a little olive oil over the veggies and pop into the oven.
- Shake the oven tray a few times during the cooking period to evenly cook the veggies.
Coconut steamed potatoes
I haven’t written the recipe up for this yet, but I’d really love to have steamed potatoes that have been coated with a slither of raw coconut oil and a dash of tamari. I’ll just steam until they pierce with a fork and then gently toss with a slither of coconut oil and splash of tamari. I know other people might prefer roast potatoes instead, so we might have to do both 🙂

After dinner mints – just because it’s Christmas
Hint of Mint Chocolates and light and perfectly refreshing. Mint is excellent to ease digestion too (which is probably where the tradition of eating mint after dinner originated).

I’ve been burned so many times with vegan recipes for loafs, I am afraid to try one more! Please tell me that yours is not dry, or falls apart into a pile even when cooled! I’m still searching for a loaf recipe I can say is tried and true and consistent every time! I just made a seed one recently and took it to friends for dinner, and we could hardly choke it down. Any advice? Thanks and happy holidays!

I am pleased to say that this one is definitely not moist. If you compact it down firmly as per the guidelines then it should hold together really well. Loads of people have had success with this one. I’ve never tried anyone else’s recipe, so unfortunately I can’t really say what might be happening with the one’s you’ve tried already.
It’s worth a try with this one perhaps.
