Let’s talk about feel-good comfort food! Sometimes you just want something that has a perfect moist cake texture whilst giving you a sweet (but not sugary sweet) ‘ahhhhh’ moment – leaving you feeling satiated, yet not bloated. Now we’re talking! How about some gluten-free vegan banana bread made without refined sugar?

My old friend Oliver aka ‘Banana Man’ (who I affectionately named, because he’s crazy, crazy, crazy about bananas) is a real fan of my Gluten-free Vegan Banana Bread recipe.

When I first served it to him the other day I held my breath, as he took the first bite… a pause, a moment of suspense and then a big YU-U-U-M! If it get’s a 10-out-of-10 vote from Banana Man, then it’s a big winner! It’s been proving very popular here in Glastonbury over the last few days, with everyone who has visited my kitchen.

This perfectly moist, Banana Bread is naturally sweetened with ripe bananas and little touch of coconut sugar. As with all the recipes here at Trinity’s Conscious Kitchen, it’s also totally plant-based and gluten-free. It’s simple to make and slices up nicely once it’s cooled down.

A deliciously moist vegan, gluten-free banana bread recipe, without refined sugar. Easy, super healthy and a real winner!

Ingredients

  • 3 medium sized bananas
  • 1 tablespoon ground flaxseed
  • 3 tablespoon water
  • 120g (1 cup) brown rice flour
  • 50g (1/2 cup) tapioca flour
  • 50g (1/2 cup) gluten-free oats
  • 1 heaped tablespoon ground cinnamon
  • 4 tablespoons coconut sugar
  • 1 teaspoon bicarbonate soda (baking soda)
  • 125ml (1/2 cup) coconut oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar
