Yesterday I was super busy preparing everything before some long haul travel. I am going to be a way for a while, so that involved emptying my fridge of all the stuff that I know won’t get eaten whist I am away.

When I looked in my fridge I found a massive head of celery – about 10 fat stalks worth; a big red beetroot; a few pears from the small pear tree in my garden a fabulous inch of ginger. Juice I thought!!! A big massive juice.

Juice also happens to be prime, pre-travel sustenance. It gives the opportunity to infuse every cell of my being with some amazing superfoods, to help on the road. I’ve always found that juicing before (after and during too) physically demanding long haul trips helps me loads. Not only do we benefit from a huge amount of nutritional stuff in one ‘easy to assimilate form’, it’s also the PERFECT way to use up anything in the fridge.

Celery!

OK first of all, let me mention celery! With a powerhouse of phyto-nutrients, celery is a health seeker’s dream come true. The benefits can be found in the leaves, stalks, seeds and roots.

Over recent years, I began to consistently notice that I’d start feeling better after eating or juicing celery. Then I found out why. It turns out that, like many vegetables, celery is a power-packed, health supporting superstar!

It contains a lot of water, which makes it ideal in juice. Not only that, it also has a wealth of anti-inflammatory compounds such as luteolin, polyacetylenes and flavonols, like quercetin (well documented for its ability to reduce inflammation).

And then there’s the beetroot!

Wowzers, brace yourself, because beetroot is laden with incredible properties to support our health.

It has been shown to lower blood pressure, support healthy liver function and to help energy levels. It’s also high in essential nutrients, antioxidants and noteworthy stuff like that.

Even without all of that that, the fact that it turns my juice an exciting beetroot red is enough to delight me on it’s own.

Ginger!

Ginger is pretty incredible too – so much so that I barely go a day without slipping it somehow into my cuisine.

Gingers’ incredible healing effects put it right at the top of my list of go-to plant-foods for medicinal purposes. Apart from being good for detoxification and cleansing, it is also a powerful anti-inflammatory, promotes healthy circulation and helps out with coughs and colds.

Ginger is zingy and warming, with a distinctive zesty flavour and aroma. It comes in yellow, white and red varieties; we use the underground rhizome part of the plant.

Power Juice with Celery, Beetroot and Ginger - using whatever is in my fridge

Yield: 2 glasses
Prep Time: 10 minutes
Total Time: 10 minutes

Delicious and healthy juice using celery, pear, beetroot and ginger.

Ingredients

  • 10 celery stalks
  • 1 large beetroot
  • 4 pears
  • 1 inch ginger

Instructions

  • Clean any muck off the celery.
  • Clean the beetroot and chop of the top & tail.
  • Chop everything into pieces that will fit into your juicer.
  • Juice it.
  • Enjoy right away.
