Easy Vegan Beetroot Burgers (Gluten Free Beet Patties)

These easy vegan beetroot burgers are made from seeds, fresh beetroot and warming spices. Naturally gluten free and rich in plant based protein, they are perfect for burgers, Buddha bowls, lunchboxes or outdoor adventures. Ideal for batch cooking and freezer friendly.

Ingredients

  • 350g sunflower seeds or pumpkin seeds
  • 350g fresh beetroot (about 1 large beetroot)
  • 1 heaped tablespoon fresh ginger, finely grated
  • 1 heaped tablespoon ground coriander
  • 1 teaspoon cumin seeds
  • 1 teaspoon sea salt
  • 1/2 teaspoon smoked paprika
  • Freshly ground black pepper
  • 50g sesame seeds, for coating

Instructions

  1. Grind the sunflower or pumpkin seeds in a blender or food processor until a coarse meal forms. A slightly rustic texture works perfectly.
  2. Wash the beetroot, trim any rough ends and grate finely. There is no need to peel.
  3. Finely grate the fresh ginger.
  4. Add the ground seeds, grated beetroot, ginger and all remaining ingredients (except sesame seeds) to a large mixing bowl.
  5. Blend using a hand blender with a pulsing motion, or briefly process in a food processor, until the mixture comes together and holds when pressed.
  6. If the mixture feels crumbly, blend a little further until cohesive.
  7. Form into evenly sized portions. Roll each portion in sesame seeds and shape into round, flat patties.
  8. Cook using one of the following methods:
  9. Grill on medium heat for around 8 minutes per side
  10. Bake in the oven for up to 25 minutes
  11. Air fry for approximately 15 minutes, turning halfway
