Vegan slaw with no mayo
A super healthy vegan slaw recipe made using tahini dressing instead of mayo.
Ingredients
- 200g carrot, grated
- 100g sweetheart cabbage, finely shredded
- 1 apple, finely chopped
- 4 tablespoons tahini
- 3 tablespoons apple cider vinegar
- 1 to 2 tablespoons water
- 1/2 teaspoon sea salt
- 2 teaspoons ground coriander (optional)
Instructions
- Grate the carrot and finely shred the cabbage.
- Chop the apple into very small cubes so it mixes evenly through the slaw.
- In a bowl, add the tahini, apple cider vinegar, sea salt, ground coriander, and 1 tablespoon of water. Mix well.
- At first, the tahini might thicken and look like it has seized. Keep mixing. It will loosen into a smooth, creamy dressing.
