Fresh ginger is one of the simplest ways to add warmth, depth and vibrancy to everyday cooking. Many people buy a root of ginger with good intentions, only to wonder how to actually use it beyond tea or the occasional stir fry.

I use fresh ginger almost every day in my own kitchen and over the years I have found many easy and delicious ways to include it in meals, drinks and baking. In this guide I am sharing ten of my favourite recipes using fresh ginger, all plant based and naturally gluten free.

If you are looking for practical inspiration, these recipes will help you use fresh ginger confidently in soups, smoothies, chutneys, curries, salads and desserts.

How do you use fresh ginger in cooking?

Fresh ginger can be used in many simple ways:

  • finely grated into soups and curries

  • blended into smoothies and juices

  • infused into herbal teas

  • added to salad dressings and sauces

  • baked into cakes and desserts

  • stirred into chutneys and savoury dishes

In most recipes, finely grating ginger releases the flavour quickly and evenly throughout the dish.

How to prepare fresh ginger quickly

One of the easiest ways to get a rapid infusion of flavour is to finely grate fresh ginger. This releases both the aroma and natural oils almost instantly. In most recipes, finely grating ginger releases the flavour quickly and evenly throughout the dish.

If you cook with ginger regularly, storing it correctly makes preparation much easier. I explain exactly how I store fresh ginger in the fridge, freezer and at room temperature here: how to store fresh ginger

How to store fresh ginger

Fresh ginger keeps well when stored correctly.

  • Store unpeeled ginger in the fridge wrapped loosely

  • Freeze whole roots and grate directly from frozen

  • Avoid peeling until ready to use

  • Fresh ginger usually keeps for several weeks when refrigerated

Freezing is my preferred method as it allows ginger to be used at any time without waste.
